Several days a week, he forages the countryside himself, picking up the fixings for dinner - asparagus so tender you can snap it off and eat it in the field, and creamy Harmonyville bleu cheese at Phoenixville's Saturday farm market, and, from Inverbrook Farm, a medley of exquisite baby onions he grills and tosses with chunked avocado (and fruity Ligurian olive oil and barrel-aged red wine vinegar) for the salad that accompanies his toothsome, orange-juice marinated skirt steak."
